Grilled halibut with nectarine salsa


We only have a little time left with this summer's nectarines, so I'm using them as much as possible.  This super simple combination is sweet, tangy & fresh and brightens up the mildness of the halibut.  

This salsa would also be really delicious with chopped mint if you aren't a cilantro lover.  It would also pair nicely with any grilled fish - salmon in particular - or chicken.  If you want to spice it up, add some minced jalapeno - I just had to keep it to 5 ingredients for the Kin Community video (see below).

Serves 4

2 nectarines – diced
½ c. red onion – diced
½ c. cilantro – roughly chopped
juice of one lime
4, 6-ounce halibut fillets – center cut (about one inch think), skin removed

Preheat grill to medium-high heat.

Mix together nectarines, red onion, cilantro and lime juice.

Season halibut fillets with olive oil, kosher salt & pepper. Place fillets on hot, oiled grill and cook for approximately 4 minutes, or until halibut releases easily from the grill.  Flip and cook about 2-3 more minutes – until just cooked through.

Top fish with nectarine salsa and enjoy!!
