Sparkling “spa water” cocktail - cucumber vodka with ginger & basil

I had some friends over last night to kick off Memorial Day and served this yummy cocktail. The cucumber reminded people of the water they give you after you get a treatment in a fancy spa so people were calling it "spa water" all night.  The name is now official.

It's so refreshing and clean with crisp herbs & cucumber and a light spice of ginger.  Be forewarned...you kind of forget there is vodka in it!

This is my group of friends new thing for the summer, btw...we are ditching the wine and serving fun cocktails...I'm excited to see what everyone else comes up with!


Makes 10 drinks

2 c. vodka
5 Persian cucumbers
5 inch(ish) piece of ginger - peeled and cut into thick rounds
3/4 c. agave
3/4c. water
3 limes, cut into quarters

2 liters soda water
A handful of purple - or regular - basil leaves

Roughly chop 2 cucumbers (no need to peel if Persian) and mix with vodka in a non-reactive container.  Place in refrigerator for at least one hour, and up to 4 hours.  Strain & keep in refrigerator until ready to use.

Bring agave, water  and sliced ginger to a boil in a saucepan.  Turn off heat and cool.  Place in refrigerator & let flavors steep for at least an hour.  Strain & keep in refrigerator until ready to use.

Slice remaining cucumber on a severe diagonal, or make cucumber ribbons with your vegetable peeler.

To assemble drinks, fill a 10-12 oz. glass with ice.  Add a 1 1/2 ounce shot of cucumber vodka, several slices or ribbons of cucumber and squeeze a quarter lime into the glass.  Add soda water until almost full.  Top with about a tablespoon and a half of ginger syrup and a couple roughly torn basil leaves.  Gently stir & enjoy.
