Love muffins


I call my kidlets my little "love muffins" so I thought I would create a special Valentine's Day recipe for them.   Lord knows they will be coming home from school Friday afternoon with their Valentine's boxes brimming with chocolates & gummies & all sorts of sugary bizniz, so I thought they could start off the day with some heart-shaped goodness.

I use almond flour, fresh & dry fruits, nuts & even some sneaky veggies in this one...and they are so tasty no one will even know they are actually quite healthy.  Hope you all have a lovey-dovey Valentine's Day!
 
Makes 18 muffins

1 c. almond flour
1/2 c. wheat bran flour
1 c. all purpose flour
2 t. baking powder
1 t. salt
1 t. cinnamon

1/2 c. melted coconut oil
3 eggs - beaten
2 t. vanilla
3/4 c. sugar
1/4 c. brown sugar

2 c. grated carrots
1/2 c. diced apple
1/2 c. raisins
1/2 c. chopped pecans
1/2 unsweetened, flaked coconut

Preheat oven to 350 degrees.

In a large bowl, combine the almond flour, bran, all purpose flour, baking powder, salt & cinnamon. and whisk together.

In another bowl, whisk together the coconut oil, eggs, vanilla, sugar & brown sugar.

And the wet mixture to the dry and whisk together until smooth.  Stir in the grated carrots, apple, raisins, pecans and coconut.  Stir until just combine.

Spoon batter into a silicone muffin pans or a regular muffin tin that had been lightly sprayed with cooking oil (or use a paper liner).

Bake 25 - 30 minute or until a toothpick inserted into the muffins comes out clean.  Let cool in pan 10 minutes and then remove to cool on a wire rack to room temperature.
